Red, White and Blue Party!

The Fourth was a success! I started off the day with a trip to the Y and a little grocery shopping for our our afternoon party.  JK and I stopped by the Hot Chicken Festival for lunch and met up with several people from work. It was 100+ degrees out, so a local brew was a must! Unfortunately the lines for hot chicken were too long, and sweat was dripping from places I didn't even know could sweat, so for 2 years in a row we went to the Hot Chicken Festival and ate no chicken!

Our condo community had a blast Wednesday afternoon. Cornhole, grillin', and cocktails.....perfection. Here was the menu for our Independence Day celebration:

Red, White and Blue Sangria
Shrimp Cocktail
Spinach and Artichoke Dip
Steaks and Veggie Kabobs
Gigis Cupcakes


Everything was a hit, especially the sangria and dip, here are the recipes.


Sangria
Mix
1 bottle of red wine
1 cup of raspberries
1 cup of blueberries
3 Tablespoons of sugar
A splash of orange juice
1 can of pineapple chunks (including juice)
Juice of 2 lemons, 2 limes and 1 orange
Let it marinade covered for 6-24 hours
Add 4 cups of ginger ale before serving over ice







Spinach and Artichoke Dip
Mix
8oz of cream cheese (i used low fat and microwave for 1 min)
1/2 cup of mayo
1/2 cup of sour cream
garlic powder, salt, pepper, red pepper flakes, Cajun seasoning to taste
1/2 cup of grated Parmesan cheese
1 package of frozen spinach (defrosted, steamed and dried)
1 can of chopped artichoke hearts (sauteed in olive oil and red wine vinegar)
Heat in microwave and stir, garnish with Parmesan cheese


The fireworks were amazing, and we had the perfect view! I love the 4th, and she loves me :) I hope you and your family and friends had a wonderful holiday as well.

  2. Looks like a fun July 4th! I am from Nashville area, and always love the fireworks! I would love to go to the Chicken festival just to see what it is all about!
